Mushroom Pate

This is the best thing since sliced bread. My friend made it for me, and I was hooked. Now, while I’m someone who LOVES chicken liver pate,  I have to say this mushroom pate is also truly delicious. And I can only imagine how it would taste if you made it with home grown mushies. There are some great mushroom growing courses around at the moment. We do harvest our own field mushrooms when we can find them, and they certainly have plenty of flavour. So in whatever fashion suits you, home grown, shop bought or wild harvested, get yourself some mushrooms, and this is what you do:


400g mushrooms, chopped
1 onion, chopped
1 garlic clove, chopped
2 T butter
2 T brandy
thyme, rosemary, salt and pepper
150g marinated feta

What to do:

Cook mushrooms, onion and garlic in butter for 5-6 minutes. Add the brandy and cook off the liquid. Add thyme and rosemary, salt and pepper to taste. Once it cools slightly, blend together and add the feta cheese. Blend again. Done!

    I know this is possibly the dumb question of the week but is T tablespoon or teaspoon

    Sadly one would think I don’t ever cook.
